Banana Bread with Crumb Topping
Ingredients
2 bananas
1 stick (1/2 cup) melted butter
1 cup white sugar
2 eggs
1 tsp. vanilla
1.5 cups of all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
1/2 cup sour cream
Optional
1/2 cup white sugar
1/3 cup flour
1/4 cup butter, cubed
1.5 tsp. ground cinnamon
Directions
Preheat oven to 350°. Beat bananas in a stand mixer until smooth, around 2 minutes. Add in melted butter, and 1 cup sugar. Beat until incorporated. Next, beat in eggs and vanilla. In a separate bowl, whisk together 1.5 cups flour, baking soda and salt. Stir flour mixture into banana mixture until well incorporated. Stir in sour cream and mix until everything is blended. Pour into a 9x5 inch loaf pan that has been lined with foil and sprayed with cooking spray. Bake for 1 hour.
Optional
For an optional crumb topping, whisk together 1/2 cup sugar, 1/3 cup flour, and cinnamon. Cut in cubed butter (I use the paddle attachment on my stand mixer instead of doing this by hand). Sprinkle over the batter before baking to add a nice cinnamon and sugar crunch to the top of the bread.
Tip: There will be enough crumb topping mix to use on a second loaf of bread.
Egg Muffins
Ingredients
24 - 36 frozen tater tots
10-12 eggs
1/4 cup milk
Bacon - cooked and crumbled
Shredded cheese
1 table spoon minced garlic
Pepper to taste - around 1 tsp.
Tip: You can add additional ingredients like peppers or mushrooms or substitute sausage for the bacon!
Directions
Preheat oven to 400°. Spray muffin pan or use liners. I prefer to use my baking stone muffin pan with cooking spray.
Add 2-3 frozen tater tots in the bottom of each muffin cup. Bake for 10 minutes.
In a bowl, beat the eggs with a fork. Whisk in milk, garlic, pepper, and shredded cheese. Remove the muffin pan with the tater tots from the oven. Fill each cup 2/3 full with the egg mixture. The tater tots may float to the top of the muffin pan. Top with the crumbled bacon and shredded cheese.
Bake for an additional 10-15 minutes until eggs are fully cooked.
Momma's Biscuits & Gravy
Ingredients
4 tbs. bacon grease (or melted butter if you want vegetarian)
4 tbs. flour (can use more grease and flour if you want a bigger serving, just keep it even)
2 cups of milk (or more depending on desired thickness)
Salt and Pepper to taste
Biscuits (baked according to package directions)
Directions
In a large skillet over medium-low heat, whisk together grease (or melted butter) and flour. Whisk constantly to form a roux. Add milk, keep whisking until completely incorporated into roux. Add salt and pepper to taste. Keep stirring over medium-low heat until the gravy is the desired consistency. The longer the gravy is on the heat the thicker the gravy will be. Add more milk if necessary. Serve over biscuits with a side of bacon!
